Like all good game developers I need to make backups of my work. Strangely, I can't seem to find the folder where my projects are.

Could someone please help?

BTW, sorry for all the stupid questions but I am just trying to get started.

C:\Users\{insert your name here}\AppData\Local\Platform_Builder\Slot1

the 1 can be changed from 1 to 8 depending on which slot you used for the game

Don't forget that you can also export your games for PB from the main menu game selection screen. Save those exports somewhere to be used as a backup. And levels automatically save backups which you can access under menu in the course editor.

If you choose to save it has a PB file then yes

It's a PBX file. PBX files are PB game files which can be used to send to TingThing to read your game and fix issues, or used to send games between computers, and for saving backups. It's basically like a Zip file with all of your PB game data, and you can just put it into other copies of PB. It's just like Game Maker's GMZ (or whatever kind of file it's called) files.
